Cornbread Sandwich

Ingredients
Hamburger meat (I use bison sometimes)
Diced peppers
Onions (optional)
Cheese (something that melts well that you like; I like American for this)
Cornbread, either from a mix or if you're hardcore from scratch
This is something my mother made quite often when I was young and was always a hit wherever she took it. First of all, you need a cast-iron skillet – I do nearly all my cooking in cast-iron. Brown about a pound of hamburger; you don’t have to finish, just give it a start. Remove the hamburger and fill about 1/4 of the skillet with cornbread, either from a mix or however you like to prepare it. Put the hamburger on top along with diced peppers, bell pepper for the tamer crowd, jalapeño for the more adventurous crowd, onions for those of you who like that sort of thing, and of course the most important ingredient, cheese. Lots of melted cheese. Then put another layer of cornbread on top. Bake it like you normally would plain cornbread. You’ve got nearly a complete meal that’s delicious, filling, easy to take with you, and easy to make. This is one of those recipes that's like pizza – once you have the idea, you can experiment with ingredients. I consider this a southwestern food that's a cultural blend of Tex-Mex, southern comfort, and ranch influence but doesn't fit solidly into any of the categories.
